Marshall University Nutrition Education Program Eat Well, Be Active! The Family Nutrition Program provides FREE nutrition outreach programs and services to all eligible public schools.

These services are designed to provide nutritional information to students, teachers, staff, administrators, and parents. Our program is designed to offer nutrition education services during school hours and involves nutrition education at various levels. How Schools Qualify:
- To qualify, 50% or more of the student population of each school must be eligible to receive free and/or reduced lunches

under the National School Lunch Program.
- Contact us to find out if your school qualifies for our FREE services. Lesson Topics:
- Show Me Nutrition (K-2nd)
- Body Works (6th -8th)
- Sports Nutrition (9th-12th)

As the school year gets underway, we wanted to explain what is going on with NEP.

Sadly, due to federal budget cuts NEP will no longer be operating after September 30, 2025.

We have enjoyed every minute of bringing nutrition education to you whether it was virtually or in-person, in the schools or in the community. We believe good nutrition habits start early as children really are our future!

We are hopeful someday we may be able to return to what we love doing but until then, we will be saying good-bye at the end of September.

Lemon is a great way to add a burst of flavor to food. A squeeze of lemon of a freshly grilled protein and vegetable is perfect way to enhance the flavor of your meal.

Lemons are packed with vitamin C, which is very important our health. It plays a role in immune health and assists with wound healing/tissue repair.

Find a new fruit at your local market and research where it is popularly consumed and how. You will be surprised at how food can connect us culturally. You also might find your new favorite fruit.

Did you know that blueberries are native to North America? A single blueberry bush can produce as many as 6,000 blueberries per year (Did You Know? 10 Surprising Facts About Blueberries, 2017).

Let's celebrate by making some whole grain blueberry muffins.

Ingredients:
-1 cup old-fashioned oats
-1 cup whole wheat flour
-1/2 cup all-purpose flour
-2 tsp. baking powder
-1/2 tsp. baking soda
-1/2 tsp. salt
-1/4 cup brown sugar
-1 Tbsp. brown sugar
-1 cup low-fat buttermilk
-1/4 cup fresh orange juice
-2 Tbsp. canola oil
-1 large egg
-1 tsp. vanilla extract
-2 cups blueberries
-1/4 cup natural almonds

Steps:
1) Preheat oven to 400 degrees F. Line 12-cup muffin pan with paper liners.
2) Grind oats in blender. In bowl, whisk oats, flours, baking powder and soda, salt, and 1/4 cup sugar. In small bowl, whisk buttermilk, juice, oil, egg, and vanilla. Stir into flour mixture, fold in blueberries.
3) Combine nuts and remaining sugar. Spoon batter into pan; sprinkle with almond sugar. Bake 22 minutes or until toothpick comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan; cool completely

Happy 4th of July! A fun, festive activity to make with kids is making some patriotic fruit pops. These fruit pops are customizable for any time of year.

Red, White, and Blue Yogurt Popsicles
Ingredients:
-1/2 lb. fresh strawberries hulled and quartered
-1/2 lb fresh blueberries
-2 cup vanilla Greek yogurt

Steps:
1.) Fill 1 teaspoon of the bottom of each popsicle mold with yogurt. Drop 1 teaspoon of chopped strawberries on top. Add another teaspoon of yogurt then 3-4 blueberries, depending on their size. Repeat the process until all of the molds are full. Freeze 4 hours or overnight.
2.) Run popsicle molds under warm water to loosen before removing from molds.
