Culinary students made sushi. Sushi is a traditional Japanese dish made with seasoned rice and a variety of ingredients, including seafood, vegetables, and meat. Students prepared California rolls, shrimp tempura rolls, spicy tuna rolls, and smoked salmon rolls, accompanied by unagi sauce, dynamite sauce, and a spicy dipping sauce.

Foods I students have been learning how to make different types of soups with the fresh stocks they have made and creating different roux as needed. Pictures are Loaded Baked Potato and Clam Chowder paired with Cheesy Garlic Biscuits. Tomato Basil and Creamy Mushroom paired with Parmesan Oyster Crackers. Culinary students learned how to roast pumpkin to make puree and made several pumpkin recipes with the pumpkins they brought back from Schweizer Orchards. Students made pumpkin sausage ziti, pumpkin pie crisp with fresh caramel sauce, double layer pumpkin cheesecake, pumpkin donuts, cinnamon glazed pumpkin oatmeal cookies and pumpkin rolls.

Students also made pumpkin bread and pumpkin spiced cupcakes with cream cheese icing and a fresh caramel sauce.

New Culinary students received the same chocolate chip cookie recipe with different add-in ingredients to test their knowledge of measuring and weighing, mixing methods, and baking. Students made strawberry cheesecake cookies, mini M&M and milk chocolate chip, dark chocolate chip with pecans, butterscotch chip, and semisweet and white chocolate chip cookies.

Students in Foods III have been learning how to cook a variety of vegetable dishes. They prepared fresh ratatouille accompanied by their signature chunky marinara sauce, steamed winter veggie bowls dressed with a fresh sherry vinaigrette, vegetable pasta bake featuring roasted cauliflower and kale, and a one pot veggie pasta that includes zucchini, mushrooms, carrots, and red bell pepper.

Culinary students prepared a variety of ice creams, including rocky road, cotton candy, coffee with chocolate chip cookies, vanilla with fresh brownies and chocolate ganache, strawberry with fresh strawberry sauce, and cookies and cream. Each was made using the different milk flavors brought back from the Shatto Milk Company field trip.

Culinary students visited the Shatto Milk Company to observe the facility's operations. During the tour, they observed the cheese curd production process and sampled various milk flavors. The students selected six distinct milk flavors for use in an upcoming ice cream-making project.
