1) First, chop the onions, garlic, a thumb-sized piece of ginger, a handful of coriander (stalked!) and 1 chilli pepper (or less, depending on the desired spiciness) very finely and sauté in a little oil in a pot.
2) After about 3-4 minutes, all the spices can be added with a k**b of butter and sautéed for some time. Make sure that the heat is not too high and that the spices can dissolve in enough oil/butter.
3) In the next step, rinse the chickpeas under cold water and add them to the pot with 750g of strained tomatoes, about 250ml of coconut milk and a sip of water.
4) While the chickpeas are simmering (15-20 min), prepare the rice/pita bread or side dish of your choice. Stir the curry from time to time, season with salt/ pepper/ spices and add a good k**b of butter, the juice of half a lime and fresh coriander just before serving.
For the Curry you need to sauté the onions, garlic and ginger. Add the spices, strained tomatoes and chickpea and let everything simmer for 15 minutes, season to taste and the curry is ready!
Simple, quick, vegan, healthy and incredibly delicious! So what more could you want!
