The hunt for a new committee has begun! 🇮🇳🔥✨

We are opening applications for committee positions to be filled to take forward this amazing society into the new academic year. If you are interested in applying for any of the positions below, please read the role descriptions which we will be posting shortly and apply using the following link:

We’re bringing you another sweet recipe to try at home! This recipe is quick and easy and will satisfy your sweet tooth immediately with a wonderful coconut taste: Coconut Barfi!!🇮🇳🥥

Ingredients:
4 1/4 cups of coconut (it can be freshly grated or desiccated)
1 1/2 cups of sugar
1-2 tbs of ghee
1/2 tsp of cardamom powder
2 tbs of chopped cashews or pistachios
2 cups of milk

How to make it:
1. Add coconut and pour milk into a pan.

2. Mix and bring it to a boil on a medium flame. Reduce the heat and cook until the milk has evaporated.

3. Then add sugar and the cardamom powder and cook until the moisture is completely evaporated.

4. Add ghee and continue to cook stirring constantly until the mixture turns dry and leaves the pan. [the ghee is optional. If you don’t like ghee- just keep stirring until the mixture leaves the pan]

5. Press down the mixture with a spatula to check if there is any excess moisture. If it still has moisture then cook further to dry.

6. Keep stirring continuously at this stage and cook until the mixture turns dense, thick and sticky.

7. Transfer the mixture to a greased pan and press down with a spatula.

8. Sprinkle nuts and keep aside at room temperature for 3-4 hours to set.

9. Slice the barfi into diamond shapes and enjoy with a nice cup of chai!!

Hey everyone!!

What is Diwali without sweets?! Missing the sweets from back home but don’t want to go through a fuss to make them- we have your back!!

Try this malpua recipe which is guaranteed to satisfy your sweet tooth and is easy to make!!

Ingredients: For malpua:
1 cup of plain flour/all purpose flour
1/2 cup of semolina
1/4 cup of sugar
1/2 tsp of fennel/saunf powder
1/4 tsp of cardamom/elaichi powder
1/2 cup of milk
Oil for frying

Ingredients: For syrup:
1 cup of sugar
1/2 water
1/4 cardamom powder
Some saffron (if available)

Instructions:
1. In a large mixing bowl take flour, semolina and sugar- and add the fennel and cardamom powder.

2. Next, add the milk and mix the batter.

3. Make sure there are no lumps and the entire mixture is well incorporated. Add water if necessary.

4. Make sure the batter is of smooth pouring consistency. Further mix the batter for at least 5 mins.

5. Cover and rest the batter for at least 30 mins.

6. Now it’s time to fry the malpuas: heat oil in a large pan. And pour the batter only when the oil is very hot.

7. Pour the batter into small pancake like shapes, one at a time.

8. Once the malpua starts to float, splash oil over the malpuas. And press gently over them.

9. The malpuas will puff up like poori. Drain them onto kitchen towel to get rid excess oil.

10. In the meantime, prepare the sugar syrup by dissolving sugar, water and cardamom powder on the stove until all the sugar is melted and a runny syrup is formed.

11. Now soak the malpuas into the hot syrup and rest for 10 mins making sure both sides are well soaked.

12. Finally, serve the hot malpuas with crushed nuts and enjoy with some ice cream or even cream.
