UHI NWH Dornoch Burghfield House, operated by The North Highland College, is unique. It is run as a training restaurant. You can enjoy outstanding service and hospitality.

UHI North, West and Hebrides Dornoch campus, the home of the Burghfield Student training restaurant and our purpose-built Β£2m golf training facility. Set in the cathedral town of Dornoch, Burghfield House provides a learning, teaching and commercial environment, featuring a private dining/conference room, a lounge which can accommodate up to forty people and 30-seat restaurant.

The design, dΓ©cor and furnishings combine to provide a subtle blend of modern efficiency with traditional comforts. Dornoch is an ideal destination for short breaks and business conferences - its relatively short distance from Inverness, with a wide range of good quality products such as golf, fishing and walking on the doorstep. Overlooking pleasant views of the gardens, The Stokehole Restaurant's traditional wood panelling and stained glass windows have been preserved to enhance the ambience and unique character of the hotel. Diners can relax in the comfort of the lounge which can accommodate up to forty people making it a perfect venue for small wedding receptions and other private functions. Just 42 miles from Inverness, Dornoch is easily accessible and provides the perfect venue for meetings, conferences and training & development days. Our private dining area can provide conference accommodation for 20 people in a private and tranquil environment. With great attention to detail and excellence, our attentive staff and students strive to obtain the highest level of customer service, satisfaction and cuisine. If you are needing help putting a training package together, our staff can offer advice in tailoring programmes to meet specific business needs and if you need a trainer, we have qualified and experienced members of staff in a number of subject areas.

We're running an elementary food hygiene e-learning course with assessment on Thursday 18th June from 10 - 11am at our college centre. Once you enrol you'll be registered onto the online portal and receive a handbook which you'll need to work through in your own time and at your own pace in time for the assessment. This week, our Professional Cookery students attended the Quality Meat Scotland beef auction mart event in Dingwall for an immersive look at the Scotch beef industry. The group spent the day walking the pens, experiencing the fast-paced energy of a live auction, and learning from industry experts.

Understanding where our food comes from is key to becoming a great chef. A huge thank you to Quality Meat Scotland (QMS) for such an informative day!

A brilliant set of results for our Professional Cookery students at the Scottish Chefs Skills Challenge in Glasgow. πŸ§‘β€πŸ³

Sydney, Blessing, Stevie and Jamie represented our Dornoch campus against 150 competitors from across Scotland, delivering fantastic performances across a range of live cooking and technical challenges. πŸ‘

Sydney achieved gold for her chocolate dessert, with silver and bronze medals awarded across other categories, along with a commendation for fish preparation. πŸ₯‡πŸ₯‰

Recently, our cookery students at the Dornoch campus welcomed Gordon Newlands from Quality Meat Scotland (QMS) for an engaging butchery demonstration using local pork.

Gordon introduced students to Specially Selected Pork, discussed current meat prices, and highlighted how versatile pork is with very little wastage during preparation. Students also had the chance to practise their butchers’ knots and will be using the pork to create a variety of dishes over the coming weeks.

Great to welcome former student Finlay Macdonald back to the Dornoch campus πŸ‘¨β€πŸ³

Now working as Sous Chef at The Dipping Lugger in Ullapool, Finlay joined our students for a live demonstration of a scallop dish from the restaurant’s tasting menu. Not only did it look and taste incredible, every student also got hands-on help to prepare the dish and a plate to try for themselves.

Finlay spoke about the invaluable skills and knowledge he gained during his time at college, and how these helped him build experience in some of the UK’s top kitchens. While studying, he worked at Skibo Castle in his first year before moving on to Glenmorangie House in his second. Along the way, he competed in competitions, completed placements in Michelin-starred kitchens, and went on to work at The Ritz in London before returning north to Ullapool.

A brilliant insight into where a career in hospitality can lead, and a real inspiration for our current students. πŸ‘

The SVQ Professional Cookery at SCQF Level 4 is perfect as an introduction to working in a professional kitchen. You will learn basic preparation methods and kitchen etiquette which is essential in any professional kitchen.

🍽️ A big thank you to Theo Creton, Head Chef at Links House at Royal Dornoch, for visiting our Hospitality students!

Theo brought in some pheasants and gave a fantastic demonstration on how to pluck, gut, and prepare them for cooking. He talked the students through quality points to look for and shared examples of the dishes he’d create using different parts of the bird.

Each student then had the chance to prepare their own pheasant and create their own dishes - an amazing hands-on experience!

We’re also really proud that two of our students currently work part-time in the kitchen at Links House while studying full-time at college. πŸ‘

The UHI Golf Team has launched a silent auction to support their 2025–26 championship season.

Based in Dornoch, our golf students combine degree-level study with elite competition, representing UHI on the national and international stage.

Funds raised will help cover essential costs including tournament entry fees, travel, accommodation and team kit, helping more students experience competitive golf at the highest level.

Auction highlights include signed memorabilia from golfing legends, rounds at world-class courses, and a once-in-a-lifetime trip that includes a day at The Masters 2026.
