The Expanded Food and Nutrition Education Program (EFNEP) is funded by the USDA’s National Institute of Food and Agriculture and is offered nationwide. The program’s mission is to improve the nutritional health of vulnerable populations. EFNEP fulfills this purpose by bringing together federal, state, and local resources and utilizing the vast grassroots infrastructure of Cooperative Extension wit

hin the Land-Grant University System. EFNEP educators are members of the communities they serve, as research has proven their superior abilities to relate to and communicate with participants. EFNEP focuses on four core areas - diet quality and physical activity, food resource management, household food safety, and food security - to help families achieve nutritionally sound diets.

Consider which meat to choose for taco night by checking store specials before making your list and heading to the store. Ground beef may be the most expensive, but you may find ground turkey, chicken, or pork on sale this week. You can swap out the ground beef for what is on sale and watch the savings add up!

Check all of your family members' schedules to see how many people will be at each meal. Doing these simple things before your trip to the store can help your food budget go further!

Fiber is a nutrient that Americans typically need to eat more often. Looking at a Nutrition Facts Label, look for total carbohydrate. Under that, you will see dietary fiber. To the right, you will see a percentage of the daily value. Look for foods that have a higher number. Foods with the Daily Value of dietary fiber 10-19% are good sources. Food with 20% or more is an excellent source of fiber. Read more on how to understand nutrition labels.
