Culinary Institute of the South at Technical College of the Lowcountry Offering associate and certificate degrees in culinary arts, baking and pastry, and hospitality.

Located in Bluffton, South Carolina, the Culinary Institute of the South at Technical College of the Lowcountry opened in the fall of 2021 with great fanfare and support from the community. The school offers hands-on, practical training in culinary arts, baking and pastry, and hospitality. Students choose from one of these program areas and can elect to earn either an associate or certificate degr

ee. Highly trained, credentialed instructors teach both theory and practical application in and out of the kitchen. Students expand their skills by completing internships in the Lowcountry’s own world-renowned restaurants and resorts. Training in customer service, hospitality and entrepreneurship round out the curriculum. Plus, general education courses can be completed at any of TCL’s campuses or online. The campus itself is a 30,000+ square-foot, state-of-the-art, stand-alone facility featuring two teaching kitchens, a bake lab, a lecture theater, a café, a teaching restaurant, two academic classrooms, two computer labs and a ballroom for events or additional classroom space. This past week Chef Eric Sayers’ culinary students from BJ Ace visited Culinary Institute of the South for a tour from Dean Orak, demonstrations from Chef Sam and Chef Jae’s students, plus a FOODseum tour with FOODseum Program Coordinator Carrie Hirsch. They left with a complimentary cookie from the Clist Cafe!

For Week 3 of Healthy Baking, students focused on baking with less sugar. The students made apple cake with caramel, apple almond pound cake, peanut butter banana oatmeal raisin cookies (one group used Nutella) and cake doughnuts 🍩. They used sugar substitutes and natural sugar replacements. Chef Jae discussed with them the properties of granulated (table) sugar and its importance in baking and learning which replacements are better suited for adjusting recipes.

Our Healthy Cooking students focused on proteins and prep for their practical exam this week. They were also fortunate to work with amberjack. We partnered again with Sea Eagle Market, South Carolina Aquarium, Port Royal Sound Foundation, and Lowcountry Food Bank to receive over 300 pounds of amberjack to be cleaned, cut, and portioned. The fillets are then donated to help our community. This is the third delivery for the summer.
