This we have an easy recipe from the southern city of Córdoba - flamenquines!

To make them, all you have to do is roll up Serrano ham (and slices of cheese if you'd like) in thin pieces of pork loin, coat it with flour, egg, and breadcrumbs, and fry it all.

They were created in the city of Bujalance and it is said that the name, meaning "little Flemish," refers to the blonde hair of Emperor Charles V's entourage, like the golden color of the flamenquines.
