Culinary Arts Institute at Richland Community College The Culinary Arts Institute at Richland Community College strives to be the leading culinary program in the Midwest.

The Culinary Arts program prepares individuals for an exciting career as a chef, cook, and/or food preparation worker for a variety of hospitality industries including hotels, restaurants, convention centers, hospitals, and corporate dining facilities. The curriculum covers all aspects of culinary preparation including meats, poultry, fish, vegetable, sauces, soups, bread and pastry baking, desser

ts, specialty cooking and international cuisine. Hands-on experience in all facets of culinary preparation and presentation is emphasized throughout the curriculum. Further, coursework emphasizing the development of supervisory and managerial responsibilities such as sanitation, menu planning, management, cost control, purchasing, cooking, baking, and restaurant operations are also provided. Specific skills aimed at creating recipes; managing the kitchen; ordering supplies; measuring, mixing, and cooking ingredients according to specified recipes; familiarity with the various types of kitchen equipment and instruments; knife skills, cutting, chopping, slicing, and dicing; and, directing the duties of other kitchen employees are developed throughout the entire program of study. Richland Community College’s Bistro Five Thirty Seven is a student-run restaurant where our culinary students get experience operating a full-service restaurant as part of their education. We recently caught up with one of our graduates for our new series, Alumni Spotlight. We thought it was fitting to begin with Class of 2023's Makayla Moran. She was an integral part of Bistro Five Thirty Seven as our Bistro Fellow. As the very first student in the Bistro To Go food truck class, you can thank her for creating our (still) very popular B2G burger!

Any Advice For New Students –
1. Be curious and ask ”why” to understand the logic and technique so you can apply it in other areas.
2. You can learn something from everyone whether it’s your chefs, your classmates, or your customers. Listen closely, stay open-minded, and absorb what people are trying to teach you. Every person you meet has something valuable to offer.
3. Invest time outside of class into practicing your knife skills & doing events to gain experience in a real kitchen environment.

Favorite Food/Dish You Like To Cook – My favorite food is any and all Mexican food. My favorite dish to cook is chicken parmesan.
