The second cohort of BCAL Scholars recently participated in a hands-on cultural food experience during orientation!

Pictured is dietetic intern Rick Yanez preparing Vietnamese spring rolls. During the activity, BCAL Project Director Dr. Heiss demonstrated how to make the spring rolls while sharing a story about a friend whose family came to the United States as refugees following the Vietnam War. The discussion highlighted the important role traditional foods play in preserving culture, identity, and community.

We are excited to see the experiences and learning opportunities this cohort will engage in throughout the program!

Faculty members Alisha Wilkins and Dr. Jennifer Bolton, Lactation Program Director, attended the Colorado Lactation Conference and represented MSU Denver's Pathway 2 Lactation Training Program

The conference provided an opportunity to connect with lactation professionals from across the state, including several former students and preceptors. We are proud to see our alumni and community partners making an impact in the field while continuing to support the next generation of lactation professionals.

Last month, the Department of Nutrition attended the Fall 2026 Dean's Office Faculty and Staff Awards Ceremony and had much to celebrate!

The department was honored to receive the Transformational Impact Award, recognizing our commitment to student success and making a meaningful impact across the university community.

We also celebrate Jesse Lunsford, PhD, RDN, who received two awards:

-Outstanding Service Award
-Professor Tenure

These recognitions reflect Dr. Lunsford's dedication to our students, colleagues, and the field of nutrition. Congratulations to Dr. Lunsford and everyone who contributes to the success of the Department of Nutrition. We are proud to celebrate these achievements and the positive impact they have on our students and community!

Student Spotlight of the Month!

Meet Natalie Seebohar, our Graduate Assistant of the Department and a passionate nutrition student!

Hi everyone! My name is Natalie Seebohar, and I am excited to be a Graduate Assistant for the Department of Nutrition while continuing my studies in the Master of Science in Nutrition program with a concentration in Dietetics.

I earned my undergraduate degree in physiology, which helped me build a strong foundation in how the body works and the important role that nutrition plays. Having spent 14 years as a competitive dancer and having nutrition be a part of my life from a young age, I developed a passion to pursue a career in sports nutrition!

Outside of school I enjoy hiking, staying active, and spending time with family and friends. I am so grateful for this opportunity and excited for what’s ahead!

🌟 This summer, the Department of Nutrition at MSU Denver had the privilege of partnering with Health Career Connection (HCC) and welcoming Lynn Truong as our HCC Intern!

Working alongside Cody Mejia, who served as her preceptor, Lynn contributed to a wide range of impactful projects supporting student success and program development. Her work included conducting research and data analysis, assisting with program assessment and survey reporting, developing marketing and outreach materials, supporting recruitment initiatives and events, and creating resources that enhance student experience. Through her research efforts, Lynn helped provide valuable insights that will help inform future departmental strategies and decision-making.

Throughout the summer, Lynn consistently demonstrated curiosity, professionalism, creativity, and a genuine passion for learning. She embraced new challenges, brought fresh perspectives to departmental projects, and made meaningful contributions that will continue to benefit our students and programs long after her internship concludes.

We are incredibly grateful for everything Lynn contributed during her time with us and proud to have been part of her professional journey. A special thank you to Health Career Connection, Annie Lozano, Rachel Gregoire, and Jeff Oxendine for creating opportunities that connect aspiring healthcare professionals with meaningful, hands-on experiences.

Thank you, Lynn, for all of your hard work this summer. We are excited to see all that you accomplish in the future!
