The Dao Research Lab is investigating SNAP enrollment, nutrition, and chronic disease in New Hampshire residents in the SEEN study. Pictured, research assistants Frankie and Whitney are demonstrating their use of the Veggie Meter, which lets us measure skin carotenoids as a biomarker of fruit and vegetable intake. Carotenoids are the colorful plant compounds that can be found concentrated in our skin tissue when we eat fruits and veggies. The Veggie Meter is just one of our powerful tools we are using in the SEEN study to assess nutrition and chronic disease.
