The Nutrition Consultant Program focuses on holistic nutrition that goes beyond supporting one dietary choice over another. Sometimes the best recipes are the ones you don’t need to memorize. ✨🍋

Holistic Chef Instructor Michele Tedrick loves this simple “no-recipe” vinaigrette because it comes together in about a minute using pantry staples—and once you learn the ratio, you can make it anytime without measuring.

✨ One-Minute Lemon Vinaigrette in a Jar

THE RATIO:
• 1 part lemon juice
• 1/3 part Dijon mustard
• 2 parts extra virgin olive oil
• Salt + pepper to taste

EXAMPLE:
• 1 tbsp lemon juice
• 1 tsp Dijon mustard
• 2 tbsp olive oil
• Salt + pepper

TO MAKE:
Add everything to a jar with a lid and shake until combined. That’s it! 🫙✨

This bright, versatile vinaigrette pairs beautifully with delicate greens, grain bowls, roasted vegetables, or simple everyday salads.

Tip: No lemons? Apple cider vinegar makes a great substitute.

Lauren Bryson, NC, BCHN® a 2020 Bauman College graduate, Board Certified in Holistic Nutrition through NANP, and founder of Lauren Emerson Wellness,, a functional nutrition practice specializing in gut health. Lauren blends holistic health coaching with functional lab testing to support clients in reaching their health goals through a personalized, root-cause approach.

In addition to her private practice, Lauren is the host of Go Play in the Dirt, a podcast exploring the connection between biodiversity, soil health, the gut, and overall health. She also serves as the full-time Diggin’ Education Manager at the Agricultural Institute of Marin, where she leads farmers market tours, farm tours, and classroom visits that connect students with local food systems, seasonal produce, and the farmers who help nourish our communities.

Before enrolling in Bauman College’s Nutrition Consultant Program, Betty Norvell (.gourmet.cuisine) spent years caring for loved ones facing serious health challenges. Through those experiences, she witnessed firsthand the powerful connection between nutrition and overall well-being. What began as a personal journey grew into a passion for helping others make more informed, nourishing choices through food. 💚

Wanting to deepen her knowledge and better support her community, Betty enrolled in the Nutrition Consultant Program at Bauman College. During her studies, she explored whole-food nutrition, alternative dietary approaches, ingredient quality, and the role nutrition plays in supporting long-term wellness.

Today, Betty combines her passion for wellness and food education through Natural Gourmet Cuisine, where she helps clients embrace healthier lifestyles in ways that feel realistic, approachable, and sustainable. Her work is rooted in the belief that nourishment goes beyond what’s on the plate—it’s about caring for ourselves and those we love. 🌿

Betty says one of the most meaningful parts of her experience at Bauman College was being surrounded by a community that shared her values around healing, growth, and holistic health. Before enrolling at Bauman College, Holistic Chef graduate Betty Norvell (.gourmet.cuisine) spent years caring for family members facing serious health challenges. Through those experiences, she saw firsthand how food could either support health—or work against it. That realization sparked a deeper passion for nutrition, healing ingredients, and learning how to prepare food that truly nourishes. 💚

Betty enrolled in the Holistic Chef Program to turn that passion into practical skills. During her time at Bauman College, she learned how to create flavorful, health-supportive meals while studying whole-food nutrition, ingredient sourcing, alternative diets, and culinary techniques designed to support wellness without sacrificing taste.

Today, Betty owns Natural Gourmet Cuisine, where she prepares nourishing meals and helps clients discover that healthy eating can be both delicious and approachable. Her work reflects the philosophy that food is more than fuel—it’s an opportunity to care for ourselves and the people around us. 🌿🍽️

“Walking down the salad dressing aisle, I used to search for the ‘least bad’ option. Then I stayed with a family in Italy where salad was simply dressed with olive oil, salt, and pepper—nothing bottled, nothing complicated. That experience changed everything.” — Holistic Chef Michele Tedrick ✨🥗

Now Michele is known among friends for her vibrant, nourishing salads and homemade dressings. One of the most requested? This Asian-Inspired Citrus Vinaigrette 🍊🌿

Bright citrus + fresh ginger + garlic + cilantro oil = a dressing packed with flavor and nourishing ingredients.

✨ Asian-Inspired Citrus Vinaigrette

INGREDIENTS:
• Zest of 1 lemon + 1 orange
• 3 tbsp red pepper, minced
• 2 tbsp honey
• 2 tsp fresh ginger
• 2 tsp Dijon mustard
• 2 garlic cloves, mashed into paste
• 1 tsp low-sodium tamari
• Pinch white pepper
• 1/3 cup citrus juice (lime + orange)
• 2/3 cup cilantro oil or EVOO
• Salt to taste

✨ Cilantro Oil:
Blend 1 bunch cilantro with 1 cup olive oil until smooth. Strain and refrigerate.

TO MAKE:
Combine all ingredients except oil. Slowly whisk in oil a few drops at a time to emulsify. As it thickens, gradually add more oil while whisking continuously.

This vinaigrette pairs beautifully with greens, grain bowls, chicken, fish, tofu, or roasted vegetables.

Sometimes the simplest homemade staples create the biggest shift in how we eat. 💚

Purple cabbage and beet sauerkraut, green kimchi, preserved lemons, spiced rhubarb with orange, and lilac mead, all crafted with seasonal, garden grown ingredients.
