May is Celiac Awareness Month!

What is Celiac Disease
Celiac disease is a serious autoimmune disease it is not a diet choice.
When someone with celiac eats gluten, their body attacks itself.
Gluten can hurt their small intestine and stop nutrients from being absorbed
Awareness helps people get safer care!

Celiac vs. Gluten Sensitivity
Not all gluten-free needs are the same:
Celiac Disease
• Autoimmune disease
• Gluten causes real damage
• Even tiny amounts are dangerous
Non-Celiac Gluten Sensitivity
• Causes discomfort
• No autoimmune damage
• Symptoms vary by person

How to Support Someone with Celiac Disease
• You can help by asking questions, reading labels, and using clean kitchen tools.
• What matters most? Believe their symptoms. Don’t push them to “just try it.” Support without judging.

April is all about Earth Day!
Celebrate Earth Day on April 22 by learning about sustainable food habits you can start using today.

What Is Sustainable Eating?
Choosing foods that use resources efficiently, reduce food waste, and protect ecosystems across the entire food system

Sustainable Eating Supports:
Environmental health – Protecting land, water, ecosystems, and wildlife while reducing food waste.
Human health – Choosing nutrient rich foods that support long term health and a balanced diet.
Food systems now & in the future - Using resources wisely, cutting food loss and waste, and making sure there’s enough food for future generations.

Current Food Waste Stats
• Nearly 40% of food is wasted in the U.S.
• Food waste creates methane, a gas that traps heat and adds to climate change
• Small changes matter!

How to reduce your food waste:
• Plan meals & shop with a list – Helps prevent buying extra food. Try meal prepping or freezing leftovers.
• Compost when possible – Turn food scraps into nutrient rich compost that helps enrich soil and support healthy plants
Start your own compost bin at home: https://www.epa.gov/recycle/composting-home

Eat Seasonal & Local
Why choose seasonal foods?
• Require less transport
• Are often fresher & more nutrient dense
• Supports local farmers & communities

Wisconsin seasonal produce in April: Asparagus, spinach, radishes, and rhubarb

This Earth Day, choose one small step to make a big impact:
• Reduce food waste
• Buy seasonal foods
• Plan meals and shop with a list
