Advanced Portrait Lighting in Studio B 📸💡

We recently visited instructor Jordan Rocque during their Advanced Digital Photography course, where students were in Studio B experimenting with different lighting setups for portraits.

This advanced class gives our Photography students the technical and conceptual foundation to fully manage professional workflows. These behind-the-scenes moments show our students working directly with speed lights and diffusers, practicing the exact lighting manipulation and depth of field control required to capture high-end raw files before moving into advanced post-processing software.

Painting on location at the Nashville Farmers' Market 🎨

We recently visited instructor Maureen O'Brien during her Open Studio course, where students headed out into the community to practice painting on location.

This creative class allows students to break away from traditional studio spaces and explore a wide variety of artistic mediums including painting and printmaking. Taking their easels to the Nashville Farmers Market provided an excellent opportunity to work from direct observation, focusing on environmental lighting, architectural perspective, and the energy of a bustling city landmark.

American Cuisine Classics in the Lab 🍗🧁

We recently visited instructor Chef SC during their American Cuisine course, where our Culinary Arts students broke off into groups of four to practice timing, teamwork, and advanced plate presentation.

This intensive class allows students to explore native ingredients while building confidence in the techniques of commercial cookery. The student groups executed a complete traditional menu, which included an egg, cucumber, and tomato salad, a main course of chicken with farro and artichokes, and a dessert of scratch-made angel food cupcakes with whipped vanilla cream.

Managing a multi-course timeline requires strict organizational skills and precision, from perfectly searing skin-on chicken breasts to mastering the delicate folding technique required for light, airy angel food cakes.

Model Fashion Photography Lighting Setups 📸💡

We recently visited instructor Allie Godwin during her Model Fashion Photography course in Studio A, where our Photography students broke down different commercial lighting setups.

Students spent the lab combining off-camera flash with natural light modifications and reflectors to produce high-end images. Learning how to direct a model and manipulate light for headshots, three-quarter, and full-length shots is a crucial part of building an agency-ready portfolio.

Graduation is just the beginning. The real goal is a successful career launch. 💼

We recently visited instructor and Illustration Program Director Mark Fleming during his Portfolio and Promotion capstone course. This intensive class gives our Illustration students the technical, conceptual, and aesthetic guidance needed to organize a standout professional portfolio.

Students spend the semester developing self-promotional identity themes, fine-tuning their resumes, and practicing interviewing techniques. It all builds toward our mandatory Portfolio Review, where industry professionals and potential employers visit campus to review our graduates' work.

From Nossi’s kitchens to the line at Sushi Bar 👨‍🍳

This past week, Nossi College of Art and Design partnered with Rey Bello to host an incredible multi-day culinary event featuring Chef Álvaro Clavijo of El Chato, the number one ranked restaurant in Colombia.

On Sunday, Rey’s team of elite guest chefs took over Nossi’s premier kitchen facilities for full event prep, giving our Culinary Arts students the chance to jump on the line and assist with production. The momentum carried right into the dinner service at Sushi Bar on Monday and Tuesday, where our student volunteers worked alongside Nossi's Culinary Arts Chair Chef Russell Ransom and alumnus Chef Luis Fernandez Barquin to help execute a high-end menu.

A massive thank you to Rey Bello for collaborating with us on this experience, the team at Sushi Bar for hosting, and Chef Álvaro Clavijo for inspiring our students. This is the power of the Nossi network. Our students get direct access to industry icons, real-world kitchen pressure, and elite hands-on opportunities.
