🚂 Full Steam Ahead! Learning Beyond the Classroom!

Our Niagara University students in MGT 324: Transportation Systems and Simulation recently went behind the scenes at Norfolk Southern’s Bison Yard in Cheektowaga, NY!

Led by Professor Yazbeck Sarkees, students got an up-close look at rail operations, from loading and unloading to equipment maintenance, and connected with industry professionals to learn how supply chains keep goods moving!

What started as a one-hour tour turned into 2.5 hours of learning, questions, and discovery!

Experiences like these bring classroom concepts to life, introduce students to exciting career possibilities, and showcase the real-world impact of transportation and supply chain management.

👏 A big thank you to the Norfolk Southern team for providing such a valuable hands-on learning experience!

🌽 From Field to Fork: Exploring Seneca Foods

Students in Dr. Mary McCourt’s Food Chemistry class got a behind-the-scenes look at how it all happens during a virtual guest talk with Ben Scherwitz, VP of Technical Services at Seneca Foods!

On October 15, Ben joined via Zoom to share how one of the food industry’s biggest players brings food from the farm to our tables. Students also received some fun Seneca Foods goodies, including apple chips and branded giveaways!

Here are a few fun facts students learned:
🌽 Seneca Foods turns fresh produce into finished products in an average of just 4 hours!
🎃 They’re the largest producer of canned pumpkin and maraschino cherries.
🚜 Their operations cover everything from seeds and farming to canning, warehousing, and trucking.
💡 They’re even finding innovative ways to make potato chips with up to 40% less fat!

Ben also walked students through the corn processing and packaging process, bringing classroom concepts to life.

Experiences like these show how food science, business, technology, and supply chain operations come together in the real world and also help students explore career paths and make valuable industry connections!

🎉 50 Years of Tradition, Excellence & Purple Eagle Pride! 💜🦅

The Holzschuh College of Business Administration proudly celebrated the 50th Annual Everett W. Ockerman Recognition Brunch at the Niagara Falls Country Club on October 4, honoring our outstanding senior business students who have achieved academic excellence.

Named in honor of Dr. Everett W. Ockerman, a dedicated Niagara faculty member who served as chair of the Department of Commerce from 1953 to 1975, this cherished tradition celebrates his lasting contributions to Niagara University and his commitment to business education and student success.

A highlight of the celebration was keynote speaker Jeff Holzschuh ’82, who inspired students to lead with curiosity, build meaningful relationships, embrace opportunities, and remember that character, empathy, and service matter just as much as professional success.

Dr. Mark Frascatore, Dean reflected on the special legacy of the Ockerman tradition, which brings together generations of Niagara business students, faculty, alumni, and families to celebrate achievement and the lasting impact of a Niagara education.

From honoring our exceptional students to celebrating the people and memories that have shaped this tradition, this milestone was a beautiful reminder of what makes our Purple Eagle community so special.

Congratulations to our honorees, and thank you to everyone who has helped make the Ockerman Brunch a treasured Niagara tradition for 50 years! 💜

🍔 From Peanuts to PGA Championships: The Business Behind the Food! 🏟️

On October 1, Dr. Mary McCourt’s Food Chemistry class welcomed Eric Fraas, V.P. of Direct Procurement, and Molly Moretti from Delaware North for an inside look at the fascinating world of food, procurement, and supply chain management!

Founded in 1915 selling peanuts and popcorn at a local theater, Delaware North is a family-owned global hospitality company that has grown tremendously over the past century!

🌎 Delaware North by the Numbers:
🔹 200+ locations across 3 continents
🔹 300+ brands and concepts
🔹 500+ million guests served annually

Students learned how Delaware North manages food, restaurants, and operations across sports venues, national parks, and major events, including:
🔹 Procurement, logistics, and supply chain strategies
🔹 Market tracking and balancing freight costs with local sourcing
🔹 Planning food and beverage needs around weather, event schedules, and playoff uncertainties
🔹 Coordinating everything from food preparation and service timing to the overall guest experience

🏆 A fun fact: Delaware North can sell more hamburgers at a single PGA Championship event than a Five Guys restaurant sells in an entire year!

Experiences like this connect classroom learning to real-world applications, showing how food chemistry, business operations, and supply chain management work together on a large scale.

A big thank-you to Eric and Molly for sharing their expertise and giving our students a behind-the-scenes look at the business of food!

From the Classroom to the Food Industry!

Today, students in Dr. Mary McCourt’s Food Chemistry class had the opportunity to learn from industry expert Abdul Sigal, R&D Processing Manager at Musco Family Olive Company, the largest olive company in the United States!

Joining the class virtually, Abdul, who is also the inventor of three U.S. patents, shared fascinating insights into the science behind olive processing, including how naturally green olives are transformed into black olives through oxidation, how their natural bitterness is removed, and how heat and pressure are used to ensure food safety.

Students also explored the different varieties and shapes of processed olives and even enjoyed a hands-on tasting experience featuring a wide variety of olives!

This engaging session was a wonderful example of how we connect classroom learning with real-world industry practices and innovation.

A special thank you to Abdul Sigal for sharing his expertise and giving our students a behind-the-scenes look at the science and technology of food production!

⭐Food Chemistry Meets Entrepreneurship!⭐

Students in Dr. Mary McCourt’s Food Chemistry class this week had the opportunity to hear from Rebecca Brady, founder of Top Seedz, who shared the story behind her entrepreneurial journey—from a simple idea and a shared recipe to building a growing food company.

Founded in 2017 with just $5,000, Top Seedz went on to win the 2021 43North $1 million prize and now ships crackers to retailers like Costco by the truckload!

Rebecca also shared:
✨ The challenges of scaling production after moving into a 3,500-square-foot facility
✨ How an ERP system and information systems help keep the business running
✨ Her vision of getting Top Seedz crackers onto airplanes
✨ The importance of community, employees and customer engagement

And, of course, students got to experience the product for themselves with a sampling of Top Seedz crackers! 😋

Experiences like this bring the Food Industry Management major to life—connecting business fundamentals such as management, marketing, analytics and operations with food-focused areas including food chemistry, supply chain and the food retail industry.

A great example of how food science, entrepreneurship, technology and business come together to turn an idea into a thriving company!
