ISU dietetic intern Akin Fayehun presents on “How Food Choices Can Power Your Day and Help You Crush Your Goals,” a campaign focused on building healthy habits through intentional nutrition choices.

This intern-designed campaign highlights practical strategies such as planning ahead and finding ways to keep healthy eating enjoyable, while also featuring simple, budget-friendly recipes like a “budget parfait” and an “energy power plate.” These examples demonstrate how balanced food choices can support energy, performance, and overall wellbeing.

This past weekend, the Illinois State University Dietetic Internship attended the Illinois Academy of Nutrition and Dietetics (IAND) Annual Conference in Naperville, IL. We had both dietetic undergraduate and graduate students representing our program. This conference brings together nutrition professionals and students from across the state to share evidence-based practices, explore emerging research, and support continued growth within the field of dietetics.

Our group was joined by both program coordinators, providing a great opportunity to connect, learn, and engage with professionals across Illinois. We are especially proud to highlight two outstanding achievements—Rebekah Greenslaugh was selected as a poster presenter, showcasing her work titled “Training to Feed Others, but Struggling to Feed Themselves: Understanding Food Insecurity Among Students in Food-Related Academic Programs,” and Joe Lippert was recognized for his participation in the IAND Pathways to Leadership Program. We also proudly recognize ISU alumni Kevin Pietro, Gabby Haskell, and Jeanna Rich for their contributions as conference presenters.

It was a rewarding experience to represent Illinois State University, expand our knowledge, and strengthen connections within the nutrition community.

Meet Grace Seck, one of our Distance Dietetic Interns from Springfield, IL! Grace completed her undergraduate degree in Food, Nutrition, and Dietetics at Illinois State University.

In her free time, she enjoys working out, watching movies, and spending time with friends. She is currently completing her clinical rotation at OSF St. Joseph Medical Center in Bloomington, where she’s gaining hands-on experience in clinical nutrition and patient care.

Happy National Nutrition Month®!

National Nutrition Month® is an annual campaign established in 1973 by the Academy of Nutrition and Dietetics of Nutrition and Dietetics. Each March, individuals and communities are invited to learn more about making informed food choices and developing healthful eating and physical activity habits.

This year’s theme, “Discover the Power of Nutrition,” highlights how nutrition has the power to help individuals and communities thrive. From choosing foods and beverages that fuel your day, to learning how to access healthy foods in your area, to building habits that support long-term wellbeing, nutrition plays an important role in feeling your best now and in the future.

Throughout the month of March, Illinois State University’s Dietetic Interns will be celebrating National Nutrition Month® by sharing campaigns they’ve developed. We invite you to follow along throughout March to see how our dietetic interns are discovering the power of nutrition!
