Bradley University's Dining Services offers allergen-free meals in Geisert Dining Hall, where meals are made in a separate kitchen with dedicated allergen-free equipment. During their food service management practicum one of our graduate students made the first ever dessert for True Balance for our campus! It was a cookie dough recipe that avoided the top allergens!

FCS 695-Supervised Experiential Learning in Food Service Management

Graduate students Sydney Peters and Amelia Lesher created and implemented a “Snack-a-Demics” program for children at the Dr. Elise Ford Allen Academy. They focused on including more colors into snacks and eating the colors of the rainbow. The children enjoyed their colorful snacks!

In class this week, students in Foundations of Dietetic Practice (FCS 502) had the opportunity to ask questions to a panel of RDNs with experiences that align with the interests of our students. Thanks to our panel for sharing their career path, necessary skills, negotiation tips, general advice, and more with our first year students!

Students in FCS 514 are not only learning about the food system, but they are seeing it in action, too! The class recently toured a food distribution facility and learned about the many steps involved in this part of the process, including how it has been impacted by the global pandemic.

In FCS 541 Research Methods, Erin Hill presented her literature review seminar on "Mode of Delivery and Development of Childhood Allergies." Using research, Erin taught the class about how maternal diet and mode of infant delivery can affect the risk of development of child food allergies.
