On Wednesday, February 18, Peters Hall was the place to be as we hosted a fantastic Chili Cook-Off! The event was well attended and filled with great food, friendly competition, and plenty of Highlander spirit. We sincerely appreciate everyone who participated—those who cooked, served, sampled, and voted all helped make the event a success. A special thanks to RU Media Production student Dustin Matney for covering the event; his video can be viewed below.

Congratulations once again to our Chili Cook-Off winners!
🌶 1st Place: Bethany Lanier, Counselor Education Department
🌶 2nd Place: Lin Martin, Math Education Program
🌶 3rd Place: Andi Bender, Athletic Training Program

Each winner received a medal to proudly wear, along with an engraved wooden cutting board and spoon commemorating their achievement.

Thank you again to everyone who made this event so memorable.

The Department of Counselor Education hosted an “Admitted Students Day” on Friday, April 17, 2026. This event provided newly admitted students with an opportunity to learn more about the expectations of the counseling program. Attendees heard from faculty members about coursework, internships, and practicum experiences, and were introduced to potential employment opportunities through graduate assistantships. Representatives from campus offices—including the Dean’s Office of the College of Education and Human Development, the Graduate Affairs Office, and the Teaching Resource Center—also shared valuable information. In addition, admitted students had the chance to connect with current Counselor Education students and ask questions about their experiences in the program.

On Tuesday, April 14, 2026, the College of Education and Human Development, in conjunction with the RISE campaign, hosted an ice cream social in Peters Hall. Students enjoyed customizing their ice cream with a variety of toppings, including syrups, sprinkles, fruit, candy, gummy bears, and more. Some students chose to enjoy their treats indoors, while others took advantage of the beautiful weather and gathered outside. The event provided a fun and relaxing opportunity for students to connect and unwind.
