This April, we’re bringing the plant power! 🌎
Looking to get one of the most essential macronutrients—protein—from plants? You’ve got options! From tofu and tempeh to beans, edamame, and seitan, plant-based proteins are versatile, delicious, and nourishing.💪
So what makes a plant a good protein source?

Proteins are made up of amino acids, which help your body build and repair, and turn food into fuel. While some plant proteins contain all essential amino acids (like soy!), others can be combined throughout the day to give your body everything it needs. 🌾✨

We get our plant-based proteins from Vermont Soy, Rhapsody Natural Foods, and Vermont Bean Crafters.🫘

RDN Day is TODAY, March 11. Here is a quick check-in with Ania Egan, MS, RD:

Ania is the regional dietitian for Vermont and New Hampshire, supporting the University of Vermont, Champlain College, Norwich University, Saint Michael’s College, VTSU schools, Franklin Pierce University, Colby-Sawyer College, and Paul Smith’s College.

Q: How do you support students beyond nutrition advice?
A: I always tell my students my door is open, even if they just want to chat. Being a college student can be a lot, so I like to be a friendly face and provide support beyond nutrition. Sometimes they just need someone to listen.

Q: What is something about your role that people might be surprised to learn?
A: We’re not just the allergy police! I work with students on a range of medical issues, support athletes, and coordinate accommodations so every student can thrive — my role goes far beyond what most people expect from a dietitian.

Q: What is one initiative, program, or moment you're especially proud of from this school year?
A: I’m especially proud of implementing the Just Ask program at Colby-Sawyer College. Sodexo began providing the campus with dining services over winter break, and we wanted to ensure students were asking the dining team questions when they had any concerns. Launching this program helped create a culture where students feel comfortable reaching out for support, improving engagement and access to nutrition resources.

A: How does your work contribute to student success on campus?
Q: If you aren’t well-fed, it’s hard to be successful. Every student’s nutrition needs are different, so it’s important to support those who are struggling for any reason. When students are supported nutritionally, they have the energy and focus to fully engage in academics, campus life, sports, and make the most of their college experience.

Harvest of the Month: Preserves & Ferments ❄️🥕🫙March in Vermont doesn’t offer much in the way of fresh local produce, but that doesn’t mean local eating stops here. For generations, Vermonters, like many communities across cold climates, relied on preserving and fermenting foods to make it through the winter months.

Before refrigeration, canning, drying, root cellaring, and fermenting weren’t trends, they were necessities. Today these methods continue to help reduce food waste, extend the harvest, and ensure access to nutrients. From pickled cucumbers and canned tomatoes to sauerkraut and tempeh, preservation techniques extend across cultures.

🌱 Fermentation not only preserves food, it enhances it. Fermented foods contain beneficial bacteria that support gut health and digestion. These probiotics can help maintain a balanced microbiome, support immune function, and even improve nutrient absorption.

At our dining locations, we’re celebrating the ingenuity of winter food traditions by featuring preserved and fermented items that highlight local ingredients year-round. Supporting local doesn’t stop when mud season starts, it just looks a little different.
