Day 11. Last day in Morocco. Scenic tour. Camel ride on beach. Snake charmer. Meeting the makers behind the goods. Shopping. And shew. Early this morning we flew to London to head home. But we have an overnight here. We did a walking tour of the city for fun and went to a pub to contrast it with the Mediterranean diet we had studied. Indiana University East

Full day in Tangier. Dr Carroll gave a brilliant lecture on the history of Morocco and the US Moroccan connection.
A walk to Café Baba where the Beatles, Rolling Stones, Jimmy Hendrix, Anthony Bourdaine and more hung out. Saw the oldest tree in Africa: 800 years old. A market tour. Lots of handicraft, including silk thread, dresses, hats, shoes, and more. And a cooking class where we made pastilla, one chicken and one vegetarian. Lots of laughs tonight and bonding over hunger. Day 8. Picasso museum and hiking Caminita del rey for a city break.
Picasso said he never painted the wars, but that the wars were in his paintings. He focused on food scarcity, for example, by painting a still life of 1 orange.

The hike was epic. 1000 ft elevation through canyons. We saw a goat! Seeing the landscape helped students understand what the land could produce food wise. Goat cheese! Haha. And sheep.

On the way back we got stuck behind a procession for “Spes Romae" (meaning "Hope of Rome" in Latin). It’s a significant event in the city of Málaga. This marks the first time the Virgen de la Esperanza de Málaga, one of the city's most beloved and spectacular Virgins, will be taken to Rome for a religious procession.

Day 7. Málaga bike tour and tapas tour. Málaga is called “the new Barcelona” and is as old as Rome. It’s smaller and cleaner than Barcelona. Beautiful and pedestrian friendly. We hit the food market and biked 7 miles.

On our tapas tour, we visited Picasso’s favorite bar, which is full of wine barrels with prices written on them for liters. I had the best grape juice of my life. After tapas we enjoyed helado. Indiana University East

Day 6. Málaga, I think te amo. After the obligatory Spanish breakfast of café con leche, pan con tomate, and fresh zumo de naranja, we took a train to our paella class where we made gazpacho, tortilla española, and paella! We were very full. The students enjoyed some afternoon free time before our hammam. The hammam is an Arab bath experience. Pools of various temperatures, cold plunge, mint tea, and a 30 min massage surrounded by geometric tiles. The LOVED it. We talked about how the Mediterranean lifestyle is about taking care of yourself, something we can forget in the US. Eat well. Love well. Take time to relax. Indiana University East

Day 4. Last day in Italy. A drive to Gallipoli. Visiting fisherman. Olive oil tasting of Cinzia’s oil versus an expensive extra virgin olive oil from the grocery. She taught us how to taste to test the quality of the oils and compare. The grocery store one was awful. She also shows us how she does her tasting to narrow down the olive oils she receives from farmers for her oil. Then she sends them to a lab for further analysis. A “normal” olive oil will have 200-300 polyphenols in a kg. Cinzia’s has over 1000. Tirosolo, shown to prevent Alzheimer’s, Parkinson’s and general brain aging, is normally a 2. Cinzia’s is a 6. She gets more than 3 times the antioxidants of a regular olive oil in her bottles. Then we went to historic olive oil presses underground where peasants were slaves to the lamp oil industry. A wonderful seafood lunch. And time on the beach. For two students, this was their first time seeing the ocean. I didn’t even think to ask if they had seen an ocean before. A wonderful memory. We decided that our time with Cinzia was precious and that if the trip ended now, we would be fulfilled. But Spain and Morocco up next where we will take what we learned from her and apply it to new contexts. Indiana University East
