Last night at our Departmental Awards Ceremony, we were proud to recognize our Dietetic Internship Certificate of Completion recipients! 🎉

These individuals have demonstrated dedication, resilience, and a commitment to excellence while completing over 1200 hours of supervised practice alongside Registered Dietitian Nutritionists (RDNs). We are excited to see the impact they will make in the field of nutrition and dietetics.

At Nicholls, students have the unique opportunity to complete their BS in Dietetics, continue on to earn an MS in Clinical Nutrition and Dietetics Leadership, and finish with a Dietetic Internship—all the required components to become an RDN.

We are proud to highlight one of our student researchers, Hailey Mason (Senior, Dietetics), who recently presented “Composting in Food Labs: A Pilot Study of Food Waste Reduction and Sustainability Education” at the University of Louisiana System Academic Summit held at Southeastern Louisiana University.

She joined seven other Nicholls State University students for this exciting professional experience, representing our university with enthusiasm and professionalism.

This work was completed under the guidance of her faculty mentors, Dr. Allison Gaubert and Dr. Brigett Scott, whose support helped shape this meaningful applied research project focused on sustainability in food science education.

A special thank you to the Nicholls Office of Research & Sponsored Programs for supporting student travel and making opportunities like this possible.

At Nicholls, health sciences students don’t just learn in the classroom—they actively engage in real-world, faculty-mentored research that contributes to meaningful issues like sustainability, food systems, and community impact.
