Attendees of the Culinary and Hospitality open house got to vote for the winning pumpkin.

Calling all ACF chefs to create a recipe.

October is National Seafood Month, and we're celebrating the best way we know how, with Florida's finest catch and a little something extra for our chefs!

This month, pick up some Fresh From Florida seafood from your local Publix (Florida Pink Shrimp, Cedar Key Clams, Bluehouse Atlantic Salmon, Florida Red Grouper Filets, or Stone Crab Claws) and save your receipt.

Then, create a dish that shows off your skills, and share it as a public post on Instagram or Facebook tagging American Culinary Federation () and Fresh From Florida (). Finally, submit your entry (with your post link and receipt) at acfchefs.org/FreshFromFlorida!

The first 150 eligible members in each entry period will receive a $100 digital Publix gift card. Entry Period 1 runs October 1–15 and Entry Period 2 runs October 16–31, so you have two chances to participate.

The catch is fresh, and the clock is ticking. We can't wait to see what you create! Get cooking and happy ! 🦐 🐟 🦀

Had a great time with 52 TRIO students. They made their own Korean and Vietnamese inspired lunch. Korean chicken sandwich, kimchee coleslaw, quick pickled cucumbers and a Mandarin-lime sorbet.

Indian River State College culinary students took a field trip to learn more about commercial food distribution centers and how they function as well as a few stops in West Palm Beach to see a small but very busy Mediterranean bakery & market and then a large international supermarket called The Mango Tree.

Special thanks to Tony the warehouse manager for taking us on a thorough tour from dry stock, cold and frozen foods and truck sanitation and pallet wrapping. Also great seeing the test kitchen and meeting Executive Corporate Chef Marco Pilloni who explained a lot about menu concept and remenuing services.
