A Taste of History in the Kitchen! 🥑📖✨

Yesterday, TWU Libraries () our dietetic interns, and esteemed TWU alumna and donor Neva Cochran, MS, RDN, LD, came together to celebrate 125 years of TWU with a special event: A Taste of TWU History! 🏛️🎂

Guests enjoyed an inspiring talk on the evolution of nutrition science and a deep dive into TWU’s famous historic cookbook collection. To top it off, attendees got hands-on experience preparing a delicious guacamole recipe adapted directly from the collection! 🥑🥣

A huge thank you to Neva Cochran, TWU Libraries, and our dietetic interns for blending history, culinary skill, and community so beautifully! 🩷🦉

Food as Medicine in Action! 🥣🥛

Collaboration across health disciplines in action! In our latest Food as Medicine session, NFS students led a hands-on workshop for Speech-Language Pathology students focused on sustainable fueling.

Together, they explored how incorporating sustainable foods—like dairy—helps balance carbohydrates and proteins to create nutritious, well-rounded meals for patient care. We love seeing our students share practical culinary and nutrition knowledge across departments to support holistic health! ✨

MS in Exercise and Sports Nutrition students Caroline Hamm and Andy Pham teamed up with former TWU volleyball athlete, Tori Woods, to show our TWU Pioneers how to elevate their pre-workout routine! 🏐💪

Together, they led a hands-on culinary demo demonstrating how to whip up easy, protein-packed breakfast pancakes designed for optimal pre-practice fueling.

Beyond the kitchen, Caroline and Andy shared real-world, evidence-based tips on translating exercise science into actionable nutrition—helping athletes boost their energy, enhance recovery, and perform at their peak. 🏋️‍♀️✨

Inspiring the Next Generation of Food Scientists! 🔬🍎

On October 5th, TWU-Denton welcomed around 120 students and 5 faculty/staff members from Flower Mound High School for an immersive, hands-on day exploring the world of Food Science!

Our NFS faculty and students led six interactive stations to give these future Pioneers a real look into the field:

Science you can taste! 🧪🟢

The TWU Food & Nutrition Network (FNN ) recently welcomed Food Scientist and Professor Bruce Perkins for a hands-on workshop on the Art of Spherification!

From exploring the chemistry behind direct vs. reverse spherification (hello, calcium lactate and sodium alginate!) to experimenting with custom flavor combinations in the lab, our students got to put molecular gastronomy into practice.

A huge thank you to Professor Perkins for sharing his expertise and showing us how science and culinary creativity collide! 🥼✨

Texas Hospitality + Nutrition Science! 🤠🌮

TWU Denton dietetic interns Ashley DaPra, Emily Rojas, and Sofia Zertuche recently welcomed 14 visiting 4-H students from Virginia who were in town competing at the State Fair of Texas!

Gathering in our Neva Hudiburgh Cochran Wellness Kitchen, our interns led an interactive mini-lecture on building a balanced plate. Afterwards, everyone got cooking to make—and enjoy—some delicious, Texas-style quesadillas! 🧀✨

We loved sharing a bit of Texas hospitality and practical Food as Medicine concepts with the next generation of leaders. Safe travels back to Virginia! ✈️✨

Collaboration is at the heart of healthcare! Our TWU Nutrition students recently hosted a hands-on culinary workshop for Speech-Language Pathology and Nursing students to demonstrate how simple, whole-food recipes can support patient health.

Together, they made homemade full-dairy ranch, fresh hummus, and scratch-made crackers—proving that nutrient-dense, delicious food can be both accessible and practical for patient care.
