Recipe Highlight: Brunching Burrito ‼️ Recently featured on UMaine Extension's Spoonful Blog, use this recipe to kickstart your mornings.

🌯 Six ingredients for an effective, protein-packed way to start your day.
~ Brunching Burrito ~
Ingredients:
- 1 egg
- 1 Tablespoon milk
- 1/2 teaspoon butter
- 2 Tablespoons cheese, shredded (cheddar or American)
- 2 Tablespoons green pepper, chopped
- 2 Tablespoons onion, chopped
- 1 flour tortilla
- Salsa (optional).

Directions:
1. Crack egg into a small bowl.
2. Add milk and mix with a fork.
3. Melt butter in a small frying pan.
4. Add egg mixture, and cook over medium heat.
5. When the egg mixture begins to thicken, add pepper and onion.
6. Stir and cook 2 to 3 minutes.
7. Top with cheese. Place tortilla on a plate. Put cooked egg mixture on the tortilla and wrap. If desired, top burrito with salsa.

🚨Check out what the EFNEP team has been up to!

Last month, EFNEP collaborated with UMaine student organizations, CNTSP and SWell, to host a fun Healthy Snack Bar event in the Memorial Union Wade Center. Students stopped by to make their very own quick and easy oatmeal packets in just a few simple steps!

1️⃣ Grab a baggie
2️⃣ Add a ½ cup of oats
3️⃣ Add additional toppings (raisins, cinnamon, brown sugar)

🍓Try out UMaine Extension's Strawberry Salsa today, it’s the perfect mix of sweet and spice! ✨ Save or share this post!
🍓 Strawberry Salsa Recipe (UMaine Extension): https://extension.umaine.edu/food-health/recipes/strawberry-salsa/

🍓 Ingredients (to make 8, 1/4 cup servings):
- 2 cups finely chopped fresh strawberries
- ¼ cup finely chopped red onion
- 2 tablespoons finely chopped fresh cilantro or mint
- 1 tablespoon lime juice
- ¼ teaspoon salt
- 1 tablespoon finely chopped jalapeño pepper (optional)

🍓Directions:
1. Clean the kitchen area and wash hands with soap and water.
2. Gently rinse produce and fresh herbs under cold running water. Pat dry with a clean paper towel.
3. Add all ingredients to a bowl and mix together.
4. For more flavorful salsa, refrigerate for at least 30 minutes before serving.

Storage:
- Refrigerate any leftovers as soon as possible or within 2 hours for safety.
- Use leftovers within 4 days.

This recipe is a great addition to tacos, on grilled chicken, or with UMaine Extension’s baked cinnamon tortilla chips!

✏️ University of Maine Expanded Food and Nutrition Education Program (EFNEP) is hiring a Community Education Assistant to teach nutrition to youth and adults in Somerset County.

📍 Office location - Skowhegan, Maine
🕗 40 Hours/Week - Full-Time
